i know this sounds vague, but a good beginner's bike is one that you can afford that you will want to ride. i would recommend checking the for sale section, as several older used bikes pop up every month for $300-700. for a beginner pretty much any of these are going to be fine (in my opinion) since you aren't going to be doing any huge drops or gaps.
then again maybe you are rich or still suckle on the teat of mommy and daddy and can just buy a $1200 bike new.
i'm sure someone will chime in with things about mod vs stock and BB height, but i'll leave that to the more experienced.

Do not buy the Evolve. It IS a good beginner bike, but you can get way better for the same money. Plus, there are some pretty shitty components on the Evolve (rear brakes) that you'll have to upgrade anyway. If you have the money for an Evolve, buy a used bike. What the guy says in post #2 is pretty good advice.

We need some more information from V-mort here
Like how tall he is, what kind of riding background he has, etc.

because you ride xc id suggest stock but you can go mod too. at your height a short version of a frame will probably be better for you. get something with a bb height of +30 or lower(for stock). my friend can trackstand on mountain bikes but he cant trackstand on my trials bike (gu mod, +55 bb i think) so the high bb makes starting out harder except for stuff on the rear wheel which might be past beginner. spend however much you want. i started out on my giant nrs 2, then got a cheap rigid small mountain bike, then a monty mod, then a gu mod. probably should have never got mod though, i miss the big wheels sometimes.

For begginers, you can't go wrong with an older Monty mod! Pretty cheap, but fairly good bikes.

'Stock' is 26 inch wheel bike.
'Mod' is 20 inch wheel bike.
'BB' means bottom bracket.
'Rise' means how high the bottom bracket is above the axles of the wheels.
To the original poster,
I say that you should get a short wheelbase stock bike for your size and being a mountain biker.
