I understand that wide handlebars will give extra leverage on the front wheel but is it really needed? Wouldn't wider handlebars put more pressure on your back and shoulders then narrower (25") bars? Even 25" are considered wide by XC standards.

you have more control and you can balance better with wider bars.
Its also more comfortable

mainly for rear wheel balance/control as cryo said.

like what cryo said, but imagine yourself using 15in handlebars, ur shift left/right "magnified" due to having shorter bars.

XC your moving at a decent speed so small movements make a big difference so small bars give extra clearance with a small loss in torque. When going slow on technical terrain that clearance is not need and stability and contorl of the front wheel is needed. Try the two and it will be obvious.
